Tin Foil Dinner
This recipe is so much better than the typical campsite classic! You’ll love the tin foil dinner because it’s packed with tender stew meat, potatoes, peppers, herbs and seasonings. You can then top it with a generous dollop of butter before sealing it up and cooking it over a Traeger wood fire
Ingredients
8 TBSP BUTTER, CUT INTO CUBES
4 SPRIGS THYME
1 GARLIC CLOVE, MINCED
2 GREEN BELL PEPPER, CHOPPED
1 SM. RED ONION, CHOPPED
2 WHOLE RUSSET POTATOES, PEELED AND CHOPPED
1 TSP FISH SAUCE
POUND STEW MEAT
1 TBSP WORCESTERSHIRE SAUCE
1 TBSP TRAEGER VEGGIE RUB
SALT AND PEPPER
Preparation
When ready to cook, set the Traeger to 350℉ and preheat, lid closed for 15 minutes.
Peel and chop potatoes into cubes. Peel and chop onions, peppers, and garlic.
Place the stew meat in a medium bowl. Add the fish sauce and Worcestershire Sauce and mix well. Season with salt, pepper and Traeger Veggie Rub. Mix again to distribute evenly.
Tear four pieces of foil and lay on a flat surface. Divide the potatoes evenly between the four sheets of foil then follow with onion, bell pepper, garlic and the stew meat- top off with thyme. Top each packet with two tablespoons of butter.
Fold the foil up and wrap tightly.
Place the packets on a sheet tray and transfer to the grill. Cook for 45 minutes to one hour or until potatoes are cooked through and stew meat is tender.
Remove from the grill, open up the packet and top with fresh herbs if desired. Enjoy!
