Smoked Grape Lime Rickey
Wow. This Smoked Grape Lime Rickey begins its journey by smoking red grapes low-and-slow until tender. We then roast fresh limes directly on the grill grates. Combine it all with lemon-lime soda for a refreshing and unique wood-fired drink.
Ingredients
1/2 lb RED GRAPES
1/2 CUp SUGAR
1/2 CUP WATER
1 LIME, SLICED
Instructions
When ready to cook, set the Traeger to 180℉ and preheat, lid closed for 15 minutes.
Rinse the grapes well and place in a shallow baking dish. Combine the 1/2 cup sugar and water and stir until sugar dissolves. Pour over grapes.
Place the baking dish directly on the grill grate and smoke for 30-40 until grapes are tender.
Remove from the grill and pour entire contents of the baking dish in a blender. Puree on high until smooth then pass the mixture through a fine mesh strainer.
Increase the grill temperature to 350℉.
Toss the lime slices and lime halves with 1 Tbsp sugar and place directly on the grill grate. Cook for 15-20 minutes or until grill marks develop. Remove from grill and set slices aside. When cool enough to handle, juice grilled lime halves.
To build the drink, fill a pint glass with ice. Pour in 1.5 oz grilled lime juice, 1.5 oz smoked grape syrup and top off with soda. Garnish with grilled lime slice. Enjoy!
