BBQ Brisket Sandwich With Special Sauce

Ingredients

1 (6-8 lb) brisket, trimmed
favorite BBQ rub
10 Large brioche buns, halved
iceberg lettuce, for serving
sliced pickles, for serving

Special Sauce

1/4 Cup mustard
1/2 Cup ketchup
1/2 Cup Traeger BBQ sauce of choice
3/4 Cup mayonnaise
1/4 Cup chopped pickles

Instructions

For a six to eight pound brisket, plan for eight to 12 hours of cook time, roughly 90 minutes per pound. A remote probe thermometer is critical to use for brisket.

Coat brisket liberally with preferred rub, Traeger Beef Rub, Traeger Prime Rib Rub or salt and pepper.

Wrap in plastic wrap. Let the wrapped brisket sit for 12 to 24 hours in the refrigerator.

hen ready to cook, set Traeger temperature to 180℉ and preheat, lid closed for 15 minutes. For optimal flavor, use Super Smoke if available.

Place brisket fat-side down on the grill grate, insert thermometer probe, and smoke for four hours.

Reinsert probe. Place the foiled brisket back on the grill and cook until the internal temperature reaches 204℉.

Remove brisket and allow to rest in the foil for at least 30 minutes.

Combine mustard, ketchup, Traeger BBQ sauce, mayonnaise and chopped pickles to make the special sauce. Smear sauce on buns.

Slice brisket after resting and place on buns with iceberg lettuce and extra pickles. Enjoy!
